Healthy egg salad


Sadly enough, I got the idea for this from a premade egg salad at Westside Market. But anything they can do you and I can do better, so give it a try:

Ingredients:
  • Hardboiled egg whites, roughly chopped
  • Baby spinach
  • Cherry tomatoes, quartered
  • Red onion, roughly chopped
  • Feta cheese, crumbled
  • Olive Oil
  • Salt & Pepper
Mix the first 5 ingredients together (proportion to taste). Drizzle with olive oil and sprinkle with salt and pepper. Can be eaten alone, or on a salad, sandwich, or bagel.

Easy. Healthy. Make it. Enjoy it.
